Earlier this summer, I had a hankering for S’mores. I did a quick internet search and chose to try this recipe for Chewy S’mores Bars from the Hershey website. These were such a big hit at work I had to make them twice in two weeks!
Heat oven to 350*F
The cookie base
1 stick softened butter
3/4 cup sugar
1 tsp vanilla
1 egg
1 1/3 cups flour
3/4 cup graham cracker crumbs
1 tsp baking powder
1/4 tsp salt
Cream butter and sugar. Add vanilla and eggs; then mix to combine. In a medium bowl, whisk dry ingredients together. Add the dry ingredients to the butter mixture and stir to combine. Press dough into a greased 9×13″ glass pan. Bake 15 min 350*F.
While the cookie is baking, prepare the S’mores Topping
3 cups (~11 crackers) graham cracker pieces (1/2 to 1 inch pieces)
4 cups (12 bars) Hershey Milk Chocolate bar pieces*
2 1/2 cups miniature marshmallows (Jet Puffed)
7 oz jar marshmallow fluff
Combine all ingredients. I reserved some of the graham crackers, chocolate and marshmallows to place on top of the topping mixture.
When the cookie has baked for 15 minutes, remove from oven and evenly spread the S’mores topping on the hot cookie. Top with reserved toppings and bake 15-20 minutes longer, until marshmallows are lightly browned.
Cool completely and cut into 18-24 pieces. This is really rich so a small piece will probably be enough!
*The chocolate bars can be neatly broken using a serrated knife. Line the knife up where you would like to break the bar and tap with a mallet until the chocolate breaks.
Yum! These remind me of something we got at Hershey Park in PA last August.
