Marsha Adams’ Cole Slaw

 This is our family’s favorite recipe for cole slaw. The original is the Cole Slaw with Peanuts recipe from Marsha Adams’ Cooking from Quilt Country. However, I don’t think we’ve every made the recipe as it was originally written in part due to Barbara’s peanut allergy. In addition we use a ready prepared cole slaw mix from the salad section of the grocery store. The dressing is a little bit of work but the results are worth it!

1/3 cup sugar

1 tbsp all purpose flour

1 tsp powdered mustard

1/2 tsp salt

1/4 tsp black pepper

1 egg

1/3 cup apple cider vinegar

1 tbsp butter

1/2 cup mayonnaise

1 package cole slaw mix

Combine sugar, flour, mustard, salt and pepper in a small bowl. Beat egg in a small saucepan and mix in the vinegar. Stir in the flour mixture gradually until completely incorporated. Whisk while cooking over low heat until the mixture bubbles and thickens. Stir in the butter and set aside to cool.

Combine 1/2 cup of the dressing with 1/2 cup mayonnaise. Toss cole slaw with the dressing, chill, and enjoy!
